To use, gently fry 1–2 tablespoons of paste in a little oil over medium heat until aromatic, then stir in one can of coconut milk and bring to a simmer. Add your choice of protein and vegetables and cook until tender, seasoning to taste with fish sauce and a touch of sugar or palm sugar; finish with Thai basil and torn kaffir lime leaves if available and serve with steamed rice or noodles. For milder flavor, start with a smaller amount of paste and adjust to taste.
